Black eyed beans are rich source of proteins and very healthy. Even though we have deep fried it in oil, you can shallow or stir fry. It tasted so good and makes a very healthy snack too.They call it as Thattai payiru also.

Karamani | 1 cup |
Palak leaves | 10 leaves |
Grated carrot | ¼ cup |
Moong dal(half boiled) | 3 tbsp. |
Fennel seeds | 2 tsp. |
Onion | 1 |
Green chilli | 1 |
Ginger | 1” |
Red chilli powder | 1 tbsp |
Garam masala | ½ tsp |
Hing | Pinch |
Salt | To taste |
Cilantro | 2-3 tbsp. |
Oil | For frying |
Method
1.Soak the black eyed beans(karamani) and the moong dal for sometime.. Transfer the beans with the water to a pressure cooker, add ¼ tsp. salt, close the lid and cook for 2 whistle. Once done, allow it to cool, remove the excess water .Blend the cooked karamani,half boiled moong dal,fennel seeds and green chillies to a coarse paste.
2. Take the ground coarse paste in a bowl; add grated carrot, chopped palak leaves ,onion, ginger,green chilli,red chilli powder, garam masala, asafoetida, salt and coriander leaves and mix well.
3. Make lemon size balls out of the prepare mixture and flatten in your palms.
5. Drain off the excess oil. and Serve hot with tomato sauce. It can be served as an evening snack with tea or as a side dish with rice and curry.
Notes
I also added a tbsp. of rava to add to the crispness. Tastes yumm!!!…It can be served with mint chutney too.
