Potato Egg Balls


Potato Egg Balls are a lip smacking snack recipe and a yummy treat for your child’s tiffin. Loaded with egg and potato, this recipe is an instant hit with kids of all ages. Ingredients
  • Potatoes – 2 no’s (large boiled )
  • Boiled egg -3 no’s
  • Chopped Onion -2 no’s
  • Green chilies -2 no’s
  • Mint leaves -1½ cups
  • Turmric powder – ¼ tsp
  • Red chilli powder – 1 tsp
  • Pepper powder -2 tsp
  • Salt – to taste
  • Dried oregano – 1 tsp
  • Corn flour – ¾ cup
  • Oil –for deep frying




Method
1. Boil the potatoes and chop onion and green chilly. Mash potato in a mixing bowl.


2. Add onions, green chillies, spices, salt, and pepper. 


3. Now add the mint leaves and combine well. 


4. Add corn flour in the mixture and keep aside.


5. Boil the eggs and remove the shell. 


6. Shred into small pieces and mix with the batter. 


7. Mix nicely and form a smooth, non-sticky dough. There shouldn't be any lumps in the dough. 

8. To shape balls, grease your hands with a teaspoon of oil. Pinch a spoonful of dough. Shape it into a round ball. Keep in the fridge until ready to fry.


9. Heat oil in a frying pan over medium-high heat. Once the oil is preheated, carefully add potato egg balls into the hot oil.


10. Fry till golden, and crisp from all the sides. Transfer fried balls to a metal sieve. Drain it on to a kitchen towel. 


11. Serve potato egg balls immediately with ketchup or dip of your choice. 
Serving Suggestions
Potato Egg Balls are incomplete without an excellent dipping sauce. 



Notes
  • Feel free to add seasoning of your choice in the dough. 
  • Do not boil the potatoes in too much water for making balls.
  • You can store these ball dough in the refrigerator for 2 – 3 days.

Mushroom masala Omelette

This omelette is moderately spicy and hot. Adjust the masala and chili powder if you wish. This tastes delicious and perfect for breakfast It can be used even for lunch with some simple dal curry and rasam.

Method

Preparing Mushroom masala:

1. Clean the mushrooms and remove the skin.Wash and set aside, cut to desired size just before you cook as they discolor fast.Heat oil in a pan, add cumin seeds.

2.Add onions and fry till they turn golden.Add tomatoes,salt and fry till tomatoes turn mushy.Add the powder and fry for a min.Fry the mushrooms on a medium flame for 2 to 3 mins,set aside .

3. Do not overcook as they tend to become soggy very fast.


Preparing egg mixture:

1. Now break the egss and whisk it.

2. Pour the masala mushroom to this egg mixture and pour omelettes.

Notes

Pepper powder can be used but we have used lots of spice powders.So try to adjust the spice level according to ur taste buds.

Scrambled Egg Masala (Egg Bhurji)

This is just another version of scrambled eggs with some added spice and veggies to it. Egg Bhurji as it is commonly known as in India is something that we do very frequently on weekends as brunch.Today's recipe is a very simple recipe. It is Egg bhurji. You can also call it  Muttai masala Poriyal in Tamil. It is basically the Indian style scrambled eggs. It is very easy to prepare and also can be made in a jiffy. It can be served with rotis/ chappathis or even with bread. I like to have it with Rice and Rasam. Other thing which I like is to add various seasonings instead of plain salt and black peppers, this time I made them Bombay masala style with Pav bhaji masala. Delicious and spicy hot egg Bhurji is As follows

Ingredients
  • Eggs -4 no’s
  • Onion-1 small finely chopped
  • Green Chilli -2 slit lengthwise
  • Green bell pepper- 1/2 chopped in small pieces
  • Oil -1 tbsp.
  • Cumin seeds-1/2 tsp
  • Grated Ginger -1 tsp
  • Tomato – 2 no’s
  • Pepper powder -1 tsp
  • Chilli powder -1/2 tsp
  • *Pav Bhaji masala -2  tsp
  • Salt –To taste
  • Cilantro -2 tbsp. finely chopped
Method
1. First beat the Eggs in a bowl. Egg yolk we can use it or avoid it, either ways. After beating the egg add Salt, l, little pepper powder and make Egg scramble. Once the Egg scramble is ready keep it aside.



2. Chop the Onions, slit Green chillies, grate Ginger and chop capsicum in cubes... Take a pan, pour oil in it. Add Garlic, Ginger and Green chili, sauté for few seconds. Next add the Onions, sauté it till Onions becomes transparent followed by capsicum.


3. Now add the Chili powder, pav bhaji masala powder and stir in well. Tomatoes are to be added last for not making it mushy. Check salt as required in between.



4. Stir well for 1 minute so that the masalas mix well with the other ingredients. Remember not to add water, as we are making it dry.



5. Now add the Egg scramble into this and mix well. Add some more pepper powder if you want it spicy. Stir well for few seconds and switch of the stove. Garnish with Coriander leaves and the dish is ready to be served.

Notes
We can add potatoes also in this preparation
Garam masala can also be added in place of pav bhaji masala.
One pod minced garlic can be added while sauting onion (optional)
* Pav bhaji masala
It is a spice blend (found in Indian stores) used for a specific recipe called Pav bhaji where the mashed vegetables are served with buttered buns. Adding it to scrambled eggs is always equally awesome but adding garam masala is absolutely perfect too.
Variations
Add curry leaves after the oil is heated. 
You could also add any cooked vegetable to make a meal out of it.
Roll the scrambled eggs into a roti, paratha or with tortilla

Vanilla Cinnamon French Toast

French toast is easy, delicious and satisfying breakfast recipe for the family. Sliced bread soaked in an egg mixture and fried. French toast is a great way to get your kids to eat eggs without them knowing.


Prep time: 10 mins |Cook time:10 mins

        Ingredients
·        Milk Bread - 8 slices
·        Eggs - 3 no’s
·       Sugar - 4 tbsp.
·       Milk - 2 tbsp.
·       Turmeric powder- pinch
·       Ghee  -  for greasing
·       Vanilla essence – 1 tsp
·       Cinnamon powder – ½ tsp
  

Method

1. In a large bowl, whisk egg .Now take hot milk with sugar, turmeric powder. Stir it till sugar dissolves.Combine the milk mixture along with the whisked egg. Now add vanilla extract and cinnamon powder.

2. Preheat a non-stick fry pan to medium-high heat. Leave it to rest and soak for a few minutes while you warm a frying pan over a low heat with the oil.



3. Dip each slice of bread in the egg wash until coated on both sides and put straight into the fry pan.Cook for 2-3 minutes each side until golden and separates easily from the fry pan.



4. If the bread is sticking to the pan, cook a bit longer. Serve plain, buttered, or with your child's favorite spread or cheese.




Notes
French toast is a delicious way to get fussy eaters to eat eggs.To maximize egg intake, reduce the milk to a teaspoon or two. If you do this, there may only be enough egg wash to coat two slices of bread.
