Cabbage Rice - Lunch Box Recipes

A delicious dish made with cabbage, onions is quick to make It is flavorful and delicious which is a perfect way to use any leftover rice or get the kids to eat cabbage. 



Ideal for office lunch, school lunch or for a weekday dinner. Depending on how much time you have, you can make it without any other veggies (except the cabbage, of course) and it will still taste great!

Ingredients
  • Cooked rice - 1 cup
  • Chopped Cabbage – ¾ cup
  • Sliced onion -1 no
  • Green chillies – 2 no’s
  • Turmeric powder – ¼ tsp
  • Fennel Powder (saunf) – 1 tsp
  • Lemon juice – ½ to 1 tsp
  • Coriander leaves –few sprigs
  • Salt – to taste
Seasonings
  • Oil/ ghee – 1 ½ tsp
  • Mustard seeds – ¼ tsp
  • Broken urad dal -2 tsp
  • Hing –pinch
  • Curry leaves –few
  • Cashew nuts -1 tsp(optional)


Method
1. Heat oil in a pan at medium heat. Splutter mustard seeds, cumin seeds, urad dal, curry leaves and cashews. 

2. When they turn light golden, add hing. Stir for a few seconds. 

3. Add onion, and green chilies.When the onion turns transparent, add the chopped cabbage turmeric powder, fennel powder. Cook for 2 to 3 minutes.

4. Add the cooked rice and salt. Reduce flame and stir well to mix. 

5. Switch off the flame and add lemon juice. 

6. Garnish with fried cashew nuts and coriander leaves.

Notes
  • The dish comes in handy when you are tired and want to make something fast that tastes good and is also on the healthy side.
  • The cabbage should be chopped evenly. This dish will be a favorite staple in your kitchen.
  • Add other veggies like carrots and spring onions just for variety sake.

Mint Pulao - Kids Lunch Box Recipes


Pudina/Mint pulao is one of the easy one pot dishes. Nowadays am trying out variety of pulaos. Pudina pulao is one out of them.It can be made simply with just rice and spices. Pudina pulao can be prepared in basmati rice.Each and every dish has a unique character, Pudina pulao is one dish of that sort which has a quality of getting along with all types of side dish either vegetarian or non-vegetarian.Simple onion raita itself will goes well with this rice.

Cuisine: South Indian

Ingredients
  • Basmati Rice -1 cup
  • Onion – 1 big size
  • Ginger garlic paste -1 tbsp
  • Turmeric powder – ¼ tsp
  • Red chilli powder -2 tsp
  • Salt –to taste
  • Water – 1 ¾ cups
Grind to smooth paste
  • Mint leaves /pudina – ½ cup
  • Fennel seeds -1 tsp
  • Green chillies -4 nos
  • Coriander leaves –few sprigs
Seasonings
  • Oil-1 tbsp
  • Bay leaf -1
  • Clove -2 no’s
  • Cinnamon -1 “piece
  • Cardamom -2
  • Star anise -2 no’s
  • Broken cashews- handful



Method

1. Chop the big onion lengthwise and keep ready. Wash and soak the rice in water for half an hour.
2. Grind the mint leaves, fennel seeds and green chili to a smooth paste by adding water.

3.Heat at oil in a pressure cooker and sauté it with jeera seeds, cloves, cinnamon, cardamom, star anise and bay leaf. 

4.Add onion and ginger garlic paste to it and fry until the onion becomes soft. Then add the ground mixture and sauté till the raw smell goes. Now add all the spice mixes and give a stir.Add soaked rice with salt and mix thoroughly and close the cooker.

5. Let it cook for 10-15 minutes and switch off the flame. Once the pressure is released, fluff it with a fork or knife.
6. Then open the cooker and transfer the dish to a serving bowl. Mint Rice is ready to serve!

Serving suggestions

Serve hot with onion raita.

Notes
  •  You can add peas, cauliflower, soya chunks also. Instead of water you can add coconut milk also.
  • It goes well with boiled egg, and raitas

Cuisine: Chinese

Ingredients
  • Cooked Rice - 2 cups
  • Mushrooms  - ¾ cup
  • Capsicum  - ¼ cup
  • Onions – 3 no’s
  • Garlic & Ginger chopped -1 tsp
  • Green chili – 2 no
  • Pepper powder -1 tbsp.
  • Spring onions (greens) -to garnish
  • Sesame Oil -2 tbsp.
  • Salt – to taste

Method
1. Heat sesame oil in pan over medium; add garlic, ginger, and onions. Stir for 30 seconds. 
2. Add capsicum sauté for 4 minutes or until tender. Now add mushrooms, salt, pepper powder and mix well. Finally Add the cooked rice and stir fry for 2 minutes or until heated through and mix all over evenly. 
3. Cook for 2 minutes till done. Cook, stirring, 2 minutes. Remove from heat; stir in sesame oil sprinkle with the remaining green onions. 
Serving Suggestions
Soya Manchurian
Pumpkin fry
 Notes
I used freshly ground black pepper in this recipe. Do not overcook rice; it should hold its shape.

Cabbage Rice



This is one other dish that I had made earlier, cabbage rice. It is a very flavorful and tasty one pot meal. Here is one that we enjoyed a lot. I was bored of simple stir fry, dal using cabbage. Vegetables like cabbage and cauliflower have earned a bad reputation because of the smell it emits while it is cooking, but unusually I have always liked both! My grandmother used to add either cumin or ginger while cooking these vegetables to reduce the pungency to some extent. So if you are one among the cabbage haters, then you have got to try this rice recipe and I bet you'll develop a soft corner for the poor vegetable.

Ingredients
  • Cabbage – 2 1/2 cups
  • Cooked rice -1 cup
  • Onions -1 no
  • Green chili -1 no
  • Garlic chopped -3 cloves
  • Curry leaves
  • Turmeric powder -1/2 tsp
  • Salt -1/2 tsp
  • Coriander leaves –few sprigs
Seasoning
  • Oil -1 bsp
  • Mustard seeds -1/2 tsp
  • Jeera seeds -1/2 tsp
  • Channa dal -1tsp
  • Urad dal -1tsp
  • Curry leaves –few sprigs
  • Hing -pinch



Method
1. Cook rice such that each grain is separate. Keep it aside till it is cooled. Heat Ghee/oil and add mustard seeds. When they start popping, add all the other ingredients followed by the onions.


2. Add the shredded cabbage, turmeric powder and salt. Sprinkle some water and close the lid. The cabbage will cook in about 5-7 minutes. Add some more water if the curry starts sticking to the pan.Add salt, 1/4 cup water (only if required, most cabbages leave lots of water while cooking, so be careful). 


3. Cover and cook till cabbage is done. Now add the rice little by little to the cooked cabbage curry and mix it with the back of a spatula (my grandmother's tip, so that the rice will not break or become mushy). I have a big wooden fork, so I use that when I make mixed rice like this. Switch off the heat. Add cooked rice and mix well.

Notes
·         The ratio of rice to water will be 1:2 and ¼, but the same one whistle will be perfect.
·         Add cashews fried in little ghee to make it richer.
