Plain Dosa Using Rice Flour - Instant Recipes

Dosa is a favorite South Indian breakfast served with chutney and sambar. It is made with rice flour and semolina and is a very healthy food option for everyone. It is very popular not only in South India but all over India among food lovers. It is a must try at home. You can make this recipe for Breakfast also. We can make this dosa in a jiffy time with minimal ingredients for a quick breakfast, snack or dinner. I do this most of the time as it' really quick and taste yum too.


This instant dosa is good option when you run out of ideas of what to make for breakfast. The yogurt in the dosa gives slight sourness to the dosa which works beautifully with the rice flour and the other ingredients.  It’s a great alternative to the traditional Dosa during the morning rush hours. Ingredients
  • Roasted Rice flour -1 cup
  • Curd –  ½ cup (prefers sour dosa)
  • Roasted Rava -1 tbsp.
  • Water – as needed
  • Salt –to taste
  • Oil – 3 tbsp.




Method
1. In a wide bowl add rice flour, rava/sooji, curd salt mix well, add water in small quantity and make loose dropping consistency batter. 

2. Rava/Sooji helps to make dosa crispy so try to add at least little. 

3. Now slowly add the water little at a time to get the consistency similar to a rava dosa.

4. If the batter becomes thick, add some more water and salt accordingly. Basically the batter should be thinner than the regular dosa and when you make the dosa you will not be able to spread it.

5. Make sure there should be no lumps in the batter. Keep the batter aside for half an hour to get set. 


6. Heat a nonstick pan, Spread some oil and pour a ladle full of batter from outer side to inner portion. If the gaps are too big fill them with the batter. Add a tsp of oil and roast the dosa. 

7. Flip to the other side and cook for another 30 seconds. Once cooked and starts leaving the edges then lightly lift the edges of the dosa and wrap it to make dosa. Each time before making dosa mix the batter well.

8.Repeat same for rest of batter and every time pouring dosa mix batter well or water will come on top. Cook in high to medium flame to get golden brown, crisp dosa. When done, transfer it to a plate and serve immediately.

Notes
  • Adjust the amount of curd depending upon how sour you like your dosa. 
  • If the dosa batter becomes too thin, there is a chance that the dosa will break. If that happens add some more rice flour to the batter.
  • Always pour dosas from outer side to inside.

Mixed Millet Soup - Instant Recipes


Millets were one of the oldest foods known to humans. Wheat and rice may be among the most popular grains but millets are amongst the healthiest of grains today. Whole millets and millet flours are naturally gluten free and a great alternative to rice and wheat to most recipes. I found a pack of ‘millet mix powder’ which was sold by one of my friends. It sounded great because it’s quick cooking, healthy and hopefully tasty. Millets are many, round in shape, tiny in size, high in nutrition, capable of growing in harsh climatic condition. 


This packaged mix has Pearl millet, Foxtail millet, ragi, White jowar, Arka millet, Long wheat, fenugreek and Mung bean. I have used “Sweet corn Cup a Soup” also just for the favour here but use vegetable stock instead of water to skip it. I used some extra red chili flakes to spice it up but feel free to use black pepper instead. It is super easy to make this soup and the goodness of it is just amazing! Millet is gluten free grain which is easy to digest so it is good for elder aged even good for children also this quick and easy recipe requires only 10 minute to cook it perfectly.

Ingredients
  • Mixed millet powder – ¼  cup
  • Vegetable stock– 4 cups
  • Curd – ½ cup
  • Salt – to taste
  • Knorr’s Sweet corn Readymade Soup – 1 sachet
  • Black pepper powder -1 tbsp.
  • Red chili flakes – 2 tbsp.
  • Coriander leaves – handful
  • Lime juice – 2 tsp



Method

1. Add the mixed millet flour and roast it till you get the aroma and transfer to a bowl.


2. Add vegetable stock followed by salt and pepper.


3. Pour the millet mixture in the saucepan cook on low heat stirring continuously. Make sure to keep stirring, otherwise it will start to curdle.


4. Cut the readymade sachet soup and make a paste form.


5. Once it starts to thicken and settle, add the readymade sachet of veg sweet corn soup and give a gentle stir.


6. Simmer the flame for at-least 10 minutes or until it thickens and add some coriander leaves.


7. Finally add lime juice at the time of serving this soup.


8. Millet soup is ready to serve.

Notes
Instead of sweet corn use sprouted and boiled millet which will add more nutritive value.
Just add water if you don’t have vegetable stock.
