Carrot Dosa

Carrot Dosa made with carrots and rice is highly nutritious and tasty. Little bit of pre work needed here is that you have to soak rice for at least a couple of hrs. before preparing the batter. Take about 2 cups of regular rice. Soak in hot water for 4 hrs. This is the most easy and tasty breakfast which I can think of while I don’t have any batter ready at home for idlis or dosas. Another easy method for working women and bachelors as well who usually are rushing to office in the morning or reaching home really late and looking for what to eat for dinner.

Ingredients
Quantity
Par-Boiled rice
½ cup
Raw rice
handful
Carrot chopped
3 no’s 
Onion
1 cup
Cumin seeds
1 tsp
Curry leaves
3-4 leaves
Cilantro
few
Green chili
1 no
Pepper powder
¼ tsp
Pudina Leaves
1 cup
salt
to taste
 
Method
1. Heat a pan pour some oil and add cumin seeds then add  green chillies,curry leaves and onion and fry it for a couple of minutes. Now add chopped carrot and fry it for a minute, keep it aside.Move the soaked rice and the other indregeints  to a blender .grind to a coarse consistency. 

2. Now add all the other ingredients to the coarse rice batter. Add the chopped cilantro to the batter with little pepper powder.Take a flat pan, and once it is hot, take one cup full of dosa batter and pour it in the center of the pan, and spread it in circular motion forming a dosa.

3. Spread oil around the dosa and allow it to cook/roast well. Once the top portion turns to golden brown color, carefully flip the dosa and allow it to brown on the other side too.

4. Now you can serve it with peanut chutney or with idly milagai podi. Enjoy making this easy delicious dosas.

Notes
Green chilies can be replaced by red chilies.If you have dosa batter ready in hand.You can very well use it for a quick meal.
