Carrot Beans Poriyal(Stir Fry)

This is a simple stir fry with carrot and beans which is easily available round the year. A typical South Indian lunch platter consists of a medley of preparations with vegetable, lentils stew and curd (yogurt) served with rice, a three course meal. Poriyal is prepared with one or more  finely chopped/ grated vegetables with few spices I prefer to add some turmeric and asafoetida to my preparation. You may omit these and still prepare a tasty poriyal.

Ingredients

Carrots
3 nos
Green beans
25 nos medium
Onion
1
Grated coconut
2 tsp
red chilli powder
1/2 tsp
Mustard seeds
¼ tsp
Bengal gram
½ tsp
Urad dal
½ tsp
Dry Red chillies
4 nos
Curry leaves
few
Salt
to taste
Method
1. Fry mustard seeds, urad dal, bengal gram dal in 2 tsp of oil.Once fried, add chopped onion, few curry leaves, fry it for a minute. 

2. Add chopped carrot and beans pieces and fry it in a low flame for few minutes.Add required amount of salt. Fry it in a medium flame and sprinkle some water. Cook it in a medium flame with closed pan. Stir it every 2-3 minutes.

3. After 15 minutes (when the water is absorbed), add 2 tsp of grated coconut and stir it for 5 minutes. 

4. Now Carrot Beans Poriyal is ready to serve.

Notes

Some of them like to saute green chillies at the time of seasonings.
