Muringaila or Drumstick Leaves can be used in
combination with Egg for preparing Thoran. It is a dry dish and goes in
combination with Rice as a side dish. I love drumstick leaves stir fried
either with coconut or with egg. A healthy yet tasty drumstick leaves fry which
is unknown recipe among many of us. I know that it is a pain to get the greens
cleaned but it compensates with its cooking time as this fry just takes 10
minutes from start to finish to cook up.

Method
1. Beat
the eggs using 1/4 tsp. pepper powder and turmeric powder. Separate the leaves from the stem and keep it aside.
3. Add
the chopped onion, curry leaves, green chili and sauté well till the Onion
turns transparent. Add the drumstick leaves and keep stirring continuously
until the leaves are cooked. Add little water and salt and boil. Keep cover
and cook for 2-4 minutes.
4. Add the grated coconut and mix well. Once it is
cooked well add turmeric powder ,beaten egg and scrambled it well. Stir continuously till
the egg is well cooked and dried up.
6. Muringaila Mutta (drumstick leaves Egg) Thoran can be serve hot
with Rice / Chappathi
Notes
If you want you skip adding coconut. People who are
vegetarians, can avoid eggs..
