(Tri color) Bell pepper/Capsicum Fried Rice

Tri-colour rice is a very colorful, nutritious and mouth-watering dish made with 3 different coloured capsicum / bell peppers and other vegetables. I love this recipe for its unique flavour and the ease of preparation. Capsicum, smoky vegetables which enhance taste and aroma of any dish. I love to give a try of any dish which is made with capsicum.

Ingredients
Quantity
Basmati rice
1 cup(soaked for 15 mins)
Red capsicum
½ cup
Yellow capsicum
½ cup
Green capsicum
½ cup
Green peas
One fistful
Chopped onion
1 cup
Cilantro
Few sprigs
Ginger garlic paste
1 tsp.
Green chillies
2 no’s
Cinnamon
1 small stick
Cardamom
2 no’s
Cloves
2 no’s
Bay leaf
1
Water
1 ¼ cups
Oil
2 tbsp.
Salt
To taste.
 Roast and grind
Groundnuts
Handful
Dry Red chilly
2
Coriander seeds
1 tbsp.
Cumin seeds
1 tsp.
Cinnamon
1” stick
 Method
1. Heat oil in a pan and add whole spices.Keep all the ingredients ready in a plate so its easy for you.cap1 2.In the meanwhile prepare the basmati rice separately with the given ratio of water. Keep aside .Add the sliced onion and when they are translucent add green chillies and ginger garlic paste. cap3 correct as 23.  Add the chopped capsicum and sautĆ© for two minutes.Now add green peas. Let it get cooked for some time.cap44. Once capsicum done, add the basmati rice. Add salt and cook in medium heat for 5 minutes.cap55. Heat a pan with half spoon of oil and roast red chilies, ground nut and coriander seeds. Grind it and make a coarsely powder with cinnamon and cumin seeds. IMG_20131014_112929 6. Serve hot with raitha, papadam or Manchurian garnish with chopped coriander leaves.
Notes
We can also add small onion (Sāmbhar onion) to enhance the taste.
Dry nuts can be added to make it crunchy.
