Karamani Carrot Sundal

Navaratri / Navratri means nine nights in Sanskrit Language, Nava means nine and Ratri means night. During these nine nights and ten days, nine forms of Hindu Goddess are worshipped. Navratri is a very famous festival in india. In south india, it is customary to display Golu ( Exhibition of Various dolls and figurines in odd numbered tires ( Shelves ). Normally we make Sundal ( South indian style salad ) as prasad. Sundal is made either sweet or savory. The delicious karamani carrot sundalis ready for neivedhyam for navarathi we well as serving.

Ingredients
Quantity
Karamani/Black eyed peas
1 cup
Grated carrot
1 tbsp.
Grated coconut
1 tbsp.
Lemon juice
1 tsp.
Cilantro
Handful
Black pepper powder
1 tsp.
Salt
To taste
For Seasoning:
Oil
1 tsp.
Mustard seeds
1 tsp.
Curry leaves
Few
Hing
Pinch
Dry red chilli
2 no’s
Method
1. Wash and soak the karamani for about 2 hours. Take a vessel, add soaked karamani with enough water .Pressure cook until they are soft and well cooked. Strain water completely and set aside. Combine the karamani, grated carrot,grated coconut in a bowl.kara12. Now chop the coriander leaves(cilantro) finely and add to the bowl. Sprinkle black pepper powder and salt. Squeeze lemon juice on the mixture. Stir well. Heat oil in a pan and do the seasonings.Pour into the karamani carrot  sundal.kara23. Enjoy the serve. Karamani Carrot sundal is ready. This is an ideal evening snack, so you need not wait for navarathri to try this sundal, you can make it any time to enjoy it, as it doesn't require any soaking time, and can be prepared easily and quickly.IMG_20131008_201047Notes
You can also add green chillies in this recipe  Take care not to overcook the dal.
If you feel the sundal is little wet, and then cook for some more time, stirring continuously until the water is fully absorbed.
