Coconut Ghee Rice

This is yet another easy and tasty rice dish from South India.  Here I have made use of raw rice but you can also make this using basmati rice.  South India is well known for its generous use of coconuts.  My mother makes the best coconut rice and right from school days till now its works for a good meal.  A person should have knowledge about how to cook rice. The rice has to be fluffy. That is the only prerequisite for this dish.  Coconut rice is one of the best lunch box recipes and it’s easy to prepare. Pair it with some spicy curry and you have a satisfying meal. My favorite combo is with potato fry. The delicious coconut and dry fruits flavored rice dish. A most famous South Indian delicacy can be easily made with good quality rice and carefully chosen chopped nuts.

Ingredients

Rice
2 cups
Pure ghee
3 tbsp
Grated coconut
1 cup
For seasoning
Oil
2 tsp
Mustard seeds
½ tsp
Urad dal
1 tsp
Channa dal
1 tsp
Dry red chillies
2
Hing
pinch
Green chillies
2 nos
Curry leaves
2 sprig
Cilantro
few
For garnishing (Purely optional)
Cashewnuts
few
Raisins
10 no’s
Method
1. Melt the ghee in deep shaped kadai and roast the nuts for few seconds. Set aside. For me, there is no coconut rice without cashew nuts.Grate the coconut and keep aside.co12.  In pan heat oil, add mustard seeds.  Allow it to splutter.  Then add urad dal followed by channa dal, roast it well.co23. Then add dry red chilly,green chillies, hing, salt and curry leaves .Saut√© for some time now add the roasted scraped coconut.  Stir once and check the salt.Cook the rice with 2 cups of water until done. Spread on a plate to allow it to cool completelyco4 4. Garnish with  dry fruits (optional) and sprinkle the raisins and serve hot. If you don’t have a pressure cooker, you could cook this rice in a saucepan. In pressure cooker the rice will cook very fast, but it will take more time to cook in a saucepan.
Even you can do this recipe with coconut milk. Just check out whether the rice has cooked, if the liquid has dried up, add more coconut milk to it and cook accordingly. Peanuts are completely optional. If you are interested in using, go with it. Can be served with some spicy curry too.
