Carrot
Sambar is a south Indian side dish recipe. It goes well with rice or
idli and sweet in taste.This warming carrot
sambar that also has a cooling effect. Sambars are popular in South India and
are most typically served with rice.
A wide variety of vegetables can be used,
and often toor dal and tamarind are common additions, along with a delightful
array of spices. Usually thick and fiery, sambars are often the first course
for a South Indian full course meal.

Method
1. In
3 cups water cook 1 cup toor dhal in a pressure cooker for 5 minutes and keep
it in the cooker. Soak tamarind in 1 cup of water for 1 hour and make a juice
of 2 cups. Wash and cut vegetables (tomato, carrot, onion) into medium sized pieces.
In a frying pan, heat oil over medium heat and sauté mustard seed, urad dhal,
fenugreek, and asafoetida until they become golden brown.
2. Add the
sambhar onions, garlic flakes & curry leaves. Sauté well. Then add the
tomato pieces and sauté till it turns mushy.
3. Add
the chopped Carrot. Mix well and cover till Carrots are almost cooked.
4. Add red chilly powder, coriander powder, turmeric
powder and salt.
5. Now add tamarind juice and cook for few minutes in a
medium flame.
6. Now add the mashed dal and let it cook for few minutes.
7. Finally garnish with coriander leaves.
8. Serve hot with idly, dosa, chappathi, rice.

Notes
You may cut the Carrot into big pieces and cook with dal in pressure cooker.
Fenugreek is good for health. It will take off heat from the body.
