Carrot Rice–Lunch Box Recipes

Carrot rice is relished and enjoyed by those who like a mild spicy taste in their food. It makes for a healthy combination of rice and carrot, leaving your senses superbly refreshed. It’s a simple and fast lunch box packing recipe for kids as well as adults.

Method:
1. Take some cooked rice in a plate and spread it out.Slice onion, peel and grate carrots.In a pan or wok heat oil add mustard, cumin seeds, cloves, cinnamon, curry leaves and allow to splutter. Add onion, grated ginger, cashews and saute until onion becomes soft.
2. Add grated carrot, mix and cook for 2-3 minutes or until carrot becomes soft. Add salt, red chilli, turmeric and mix well to combine everything.  Add cooked rice and stir gently but take care not to break rice.
3. Cook for 2 minutes with gentle stir intervals, add lemon juice mix well and off flame.Garnish with coriander leaves
Notes
Add other vegetables like peas and capsicum etc.
Dessicated coconut powder can also be added at the last for the tasteness.
