Method

1. Take the Haplf white pumpkin,peel the outer layer and cut the centre seed portion with those fleshy area.

2. Now cut the white pumpkin into small pieces and keep the tomatoes ready.Heat jaggery,check for impurities and filter it.

In a blender add all the other items with the filtered jaggery water.

3. Blend till smooth.Pour it in a large vessel and mix lemon juice.Now its redy to serve.enjoy your drink.

Sukku powder is nothing but “Dry ginger powder”.

Basundi–Indian Dessert Recipe

 

This is a rich milk based dessert. This is usually prepared by reducing milk and garnishing with roughly chopped nuts. For this yummy dessert, you don't have to scrap the fat; instead you can collect the fat layer that forms on the top of the boiling milk. This gave a good texture and a delicious taste.

Method

 

1. Soak almond in hot water for 10 mins and peel the skin. Boil the milk separately.

In a heavy bottom vessel pour the milk and simmer the flame for the first few minutes. Stir constantly.

 

2. Allow the contents to reduce to half the quantity while stirring continuously. The texture of basundi is smooth. The consistency is little thinner

 

3. Add chopped nuts, cardamom and saffron strands. Stir once. Switch off the stove. Let the contents cool. Refrigerate and serve chilled.

 

Served with

Poori/Puri

 

Notes

Adjust the sugar according to your taste.

Aloo Capsicum Stir Fry

Aloo Capsicum Dry curry is one of the most popular North Indian dish.It is a delicious curry that can go well with chapatti, paratha & rice. It is very simple to make and needs less ingredients which are commonly available. It is an easy to prepare and quick sabzi which tastes really good.

Method
1. Heat 3-4 tablespoons oil in a pan & add potatoes to it.Fry them for a minute or two & then take them out on a paper towel. Keep them aside.
2. In the leftover oil, add asafetida & cumin seeds. As they crackle, add ginger garlic paste. Mix well & add capsicum to it.
3. Mix well & add turmeric powder & coriander powder to it’s the mixture leaves oil, add salt, red chilli powder & garam masala powder.
4. Then add fried potatoes to it.Cover the pan with a lid till the capsicum & potatoes turn soft. Keep checking in between. Once they become soft & well cooked, turn off the flame.
5. Potato capsicum is ready to serve.

Side dish for rice
Rotis or Parathas

Actually I did not add tomatoes coz I feel it will change the whole taste.

Method

1. Add ice cream, 2 tablespoons syrup, cocoa powder and 1/4 cup milk to blender. Blend just until smooth and there are no lumps of ice cream.

2. Taste and add more syrup if needed. If shake is too thick, gradually add milk until it reaches the consistency you like.

3. Scraping down sides as necessary.Pour the milkshakes into the glasses or bottles and savor each mouthful.

Manathakkali Keerai(Black Night Shade Leaves) Poriyal

It’s an excellent and healthy side dish in any healthy meal. Manthakkali Keerai has lots and lots of medicinal value. I used Manathakkali keerai (leaves of black nightshade) combining moong dal and made dry curry.

They taste good and can be used as a side dish. Moong dal when cooked direct till it is 3/4 done and combined with any green will taste good and give the curry consistency. Manathakkali Plant is very common in South India. It’s a medicinal plant and used widely in Ayurvedic medicine. Leaves of this plant are believed to cure stomach related problems and liver problems.

Method

1. Pluck the good manathakkali leaves from the plant. Wash them thoroughly and chop them nicely. Soak the Payatham Paruppu in water and cook them separately and keep the cooked dal ready.

2. In a kadai / pan, add oil first. Finish the tempering process by adding hing, mustard seeds, urad dal, and dry red chillies into the pan. Add the chopped leaves into the pan. Sprinkle some water and allow them to cook for 2-3 minutes with the lid closed.

3. When it’s cooked, add the cooked Moong Dal, required amount of salt into the pan and fry for another 2 minutes. Switch off the flame and garnish with some fresh coconut flakes on its top.

4. A healthy side dish is ready to be served.

Coconut  gratings can be added while switching off the flame.

Basil Soup
