Stir Fried Jack Fruit Seed Curry

During the season, jackfruits are sold in plenty in Tamil Nadu. Jackfruit seed curry is my favorite curry from childhood. Curry made from ripe jack fruit is not very tasty, but the seeds from ripe jack fruit make a delicious curry. . Its seeds often have a thick, plastic like skin, which has to be removed from the flesh before making jack-fruit curry. Jackfruit seeds are known as Palakottai in Tamil. So let us prepare Fried Jackfruit Seeds curry
Recently I found the jackfruit in the store felt so happy n excited and bought it ate all the fruit and saved the seeds for the curry. I bought some pieces of jackfruit (not the whole) so I have only few seeds. This jackfruit seeds roasted in spices is something you can't resist. It is one of my favorites and the most difficult part of making this dish is cleaning the jackfruit seeds. If you can get a very green jack-fruit, before this tough skin has had a chance to develop around the seeds that is better.
As whole jackfruit is too big even for a big family, it is cut and ripe fruits inside are sold loose as per the choice of the buyer. My family members love the sweetness of ripe jackfruit. I use jackfruit seeds to prepare stir-fry. It suits well as a side dish with rice I also use baby jackfruit to prepare side dish.

Method
1. You can steam them in pressure cooker for a minute or two, on full pressure. Wash green chillies, remove their stems and chop them finely (instead of green chillies you can use 1 tsp chilly paste).
2. Heat a tbsp. of oil in a pan, add mustard seeds, cumin seeds.hing, a stalk of curry leaves. As seeds crackle, add onion, ginger and green chillies and stir-fry until lightly browned.
3. Now add jackfruit and let it coat with the oil, add a pinch of turmeric powder, sambhar powder, and mix well, so that seeds get coated with masala. Keep stirring in slow flame till the raw smell of masala powder goes off.
4. Once boiled, close with the lid and cook in low fire till jackfruit seeds are cooked, not mushy. Sprinkle the garam masala and transfer to a bowl.
5. Serve it with Drumstick Sambar, Kala Channa Rasam, Scrambled Egg masala(Egg Bhurji), Pickle and with Appalam.
Notes
  • Some add pepper powder and garlic to this. If you wish you can add that while cooking jackfruit seeds.
  • To store  jackfruit seeds for a longer period keep it in the fridge, otherwise the seeds get dried very fast.

Tempting Jack fruit seeds stir fry....looks so delicious and yummy...my all time favourite dish...In kerala my mom cook this recipe frequently but in Singapore it is very expensive fruit ;-( so we can"t consume occasionally only :-( ...Thanks Shobha..you give me some good back memories here ..:-) thank you :-)
