Corn Dalia ki Kheer


Corn Daliya is a popular breakfast cereal in North India and is made with corn grits. It can be made either as a sweet Dalia kheer or as savoury Dalia. This makes it an ideal food for diabetics, people wanting to lose weight or those who have high cholesterol levels. It is a healthy food for small children. It reduces the risk of high blood pressure, cholesterol, diabetes.


It has high fiber content, which not only helps in keeping the digestive system healthy but also keeps the hunger at bay for a longer time. Daliya is very good for all age people. You can give corn daliya ki kheer to babies as it is very nutritious and easy to digest and kids just love its creamy texture and taste. Old age people have difficulty digesting heavy food but corn daliya Ki kheer is also good for them.

Ingredients
  • Corn Grits(Daliya) –  ¼ cup
  • Ghee -3 tbsp.
  • Water -2 cups
  • Whole milk – 1 cup
  • Sugar – ¾ cup
  • Cardamom powder – ½ tsp
  • Almonds -10
  • Raisins -2 tbsp.
  • Cashews -2 no’s



Method 

Pan method

1. Heat ½ tsp ghee in a pan and roast dhaliya on a low flame for 3-4 mins until it becomes light brown or gives a nice aroma, stir continuously so that it does not stick to the pan.

OR

Pressure cooker method

1. Heat ghee in a pressure cooker and add broken wheat. Roast on medium flame for approx. 3 minute till it become golden in color. Add 2 cups of water and roasted broken wheat in the cooker and pressure cook for 4 whistles on low flame.


2. Chop Almond to silvers. Pour 2-3 drops of ghee in a pan and roast all the nuts on low flame for 2 minutes and keep aside. 

3. Boil milk in a deep heavy pan.When the milk starts boiling add roasted corn daliya in it and stir.Now add water and cook daliya on low flame stirring it occasional so that it doesn’t get burnt or fall out of the pan.


4. When the milk becomes slightly thick and corn daliya becomes soft add sugar and stir till the sugar gets dissolved.


5. Add roasted almonds and cardamom powder and stir for a min. Let it cook on low heat for 5-8 minutes. 


6. Kheer is now ready, turn off the flame and take out kheer in a bowl.

7. Garnish with almond, raisins and cardamom powder before serving. Serve hot or chilled.



Notes

  • If you want to avoid ghee then dry roast in a pan for 5 minutes.
  • Stir the milk after every 2 -3 minutes nicely. 
  • Milk sould not stick to the bottom of wok.
