Rich Soya Koftas in Peanut Gravy

As you all know, Soya is a high source of protein and is highly beneficial for health and is important to have it in our diet. It is a healthy meat replacement ingredient. I never liked soya chunks as a kid and even my initial experiments with them were a disaster. Then I started frying it with spices which my Mil always does. I prepared with soya granules, mashed potatoes and some more interesting ingredients which finally dipped into peanut gravy which is completely a protein pack. I am presenting this dish in an interesting way.

This recipe got published in Salis Magazine.

To grind

Method

For the soya koftas

1. Soak the soya granules in enough hot water, cover with a lid and keep aside for 5 minutes. Drain and squeeze out all the water from the granules. Keep aside.Put it in the grinder and give it a gentle blend. Make sure not to make a paste of it but just to make it like keema and as it is very soft

2. Fry the ingredients in the pan for 5 mins and then mix it in the bowl.Take a bowl and add soya mix, paneer, roasted potatoes, chopped cabbage.ginger green chili paste, corn flour and salt. Knead into soft dough.

3. Now make circular balls with that and flatten that with your hand. It will give you 10 such balls.I just shallow fried the balls with minimum oil.

For the gravy

1.Heat the oil in a deep non-stick pan, add the onions and ginger and garlic, mix well and sauté on a medium flame for a few seconds.Add spice powders and wait till the oil oozes out from the gravy.

2.  After sometime add the peanut ground paste. Mix it really well with some water and then add some salt. Put the lid on and low down the heat and cook it for another 5min.After that sprinkle some chopped coriander and cream from top and serve with steam rice or nun.

Served with

Stuffed parathas or chapatti

Notes

Add the koftas just before serving. (Can heat for 2 minutes).Serve immediately garnished with mint leaves or with coriander leaves.
