Fada Lapsi - Sweetened Gujarati Broken Wheat Halwa


Fada lapsi or Lapsi Halwa or Broken wheat dessert, is famous Gujarati dessert. Broken wheat is rich in fiber and jaggery is rich in vitamins and minerals making Lapsi a very nutritive sweet. The traditional recipe that is made is plain and simple without any nuts and spices.This dish is made with broken wheat which is also known as” Dalia”.  Fada Lapsi is very popular among Gujarati’s and it is specially made on auspicious occasions.

Ingredients
  • Broken Wheat (Dalia) – 1 cup
  • Jaggery – 1 cup
  • Cardamom powder – ½ tsp
  • Raisins – ¼ cup
  • Cashewnuts – ¼ cup broken
  • Ghee -2 tbsp.(boiled water)
  • Water -3 - 4 cups

Method

1. Dissolve the jaggery in 2 cups of hot water, strain to remove any residue and set aside.
Heat one tablespoon of ghee in a pan on medium heat; add the cashew nuts and roast until the color changes to light golden. Turn off the heat and keep the roasted cashew nuts aside.

2. Add wheat or lapsi to the melted ghee and stir-fry until it turns golden color. When ready, a wonderful aroma rises from the panAdd 2 cups of boiling water and simmer gently, covered. Stir frequently. Make sure that wheat is cooked through. 


3. Check it by picking a few grains from your spatula and pressing between your forefinger and thumb. The grains should be soft. Wrap a kitchen towel around your hand or wear an oven glove when stirring, as there is a lot of splashing from hotly bubbling halwa.

4. Pour in the jaggery mixture and cardamom powder stirring continuously until well combined. Reduce the heat to low and cover the pan with a lid and simmer for 10 minutes; stirring occasionally until the wheat is cooked to tender. Switch off the gas and leave it covered for 10 minutes.


 
Allow the Lapsi to rest covered for five minutes. Stir in the cashew nuts and the raisins to the above mixture and serve

Serving suggestions
As a Dessert or a sweet for special occasions. 
Evening tea.


Notes
·        You can use brown sugar or any other sweetener instead of Jaggery or Gur.
·        Roasting the broken wheat in ghee gives the Lapsi a rich brown color, intense aroma and nice flavor. 
·        Amount of water will depend on the variety of broken wheat.
·        White sugar or brown sugar can be used instead of jaggery.
