Orange Kesari (Sheera)

Kesari is a popular sweet dish prepared with Sooji. So try this easy recipe to impress your kids.Just like normal kesari which is prepared by adding orange juice. It gives a mild tangy orange flavor and enjoy with your loved ones.Now let’s go to the recipe

Ingredients
  • Sooji (Rava) – ½ cup
  • Orange Juice -3/4 cup
  • Water – 1 cup
  • Sugar -3/4 cup
  • Orange food color - pinch
  • Cardamom powder -1/2 tsp
  • Cashews and raisins – ¼ cup
  • Ghee -1/4 cup

Method
1. Heat a spoonful of ghee in a sauce pan and roast the sooji nicely and keep aside. Now roast the cashew nuts and raisins separately and keep aside.Heat ghee in a pan and add water, pour the orange juice, sugar, cardamom powder and give a quick stir. 
2. When it starts boiling, add rava and stir without any lumps.And add remaining ghee/butter and stir continuously till the kesari starts leaving the sides. 
3. Lastly add the roasted cashewnuts and raisins mix well.Transfer in to a bowl and fill the bowl up till the brim and invert it on to the serving plate. Garnish with dry fruits and enjoy.

Notes
Close it with a lid and leave it undisturbed for 1-2 minutes.
Dry roast the rava till golden brown.
