Method
1. Heat a spoonful of ghee in a sauce pan and roast
the sooji nicely and keep aside. Now roast the cashew nuts and
raisins separately and keep aside.Heat ghee in a pan and add water, pour the
orange juice, sugar, cardamom powder and give a quick stir.
2. When
it starts boiling, add rava and stir without any lumps.And
add remaining ghee/butter and stir continuously till the kesari starts leaving
the sides.
3. Lastly
add the roasted cashewnuts and raisins mix well.Transfer
in to a bowl and fill the bowl up till the brim and invert it on to the serving
plate. Garnish with dry fruits and enjoy.
