Avacado(Butterfruit) Pista Lassi

Lassi is a typical Indian shake that can be either sweet or salty. This is another recipe I came up with for our summer that is just around the corner. Avocados often referred to as butter fruits, is a super fruit which is known for its creaminess and numerous health benefits associated with it... It tends to be made with thick creamy yogurt, but I find that the avocado makes it creamy enough, so I use a mix of low-fat yogurt and soy milk. What's more, the yogurt/milk mix provides good amounts of calcium and protein. Adjust as you wish, with low fat yoghurt for a healthier option if you must. The flavors of this lassi are very traditional. Cardamom seeds add fragrance and sweetness, while the light, delicate notes of rosewater enhance the floral fragrance and flavor. This lassi comes together in less than five minutes, and the yogurt helps it retain its bright green color, so you can make this in advance and refrigerate it.

Ingredients
  • Ripe Avocado’s  -2 no’s
  • Chopped pistas -3/4 cup
  • Plain Yogurt - 1 ½ cup
  • Soy milk -1 cup (200 ml)
  • Sugar -3 tbsp.
  • Cardamom pods crushed -2 no’s
  • Ground cinnamon -1 tsp
  • Rose water -1 tbsp. (Optional) 

Method
1. Slice the avocado in half, lengthwise. Remove the pit, peel and roughly chop.
 2. Add the yogurt, Soymilk, honey, crushed cardamom seeds, and rosewater to the blender.
 3. Refrigerate the prepared lassi for 2 hours and serve chilled

Notes
    Soy Milk is available in supermarkets.
    Honey can be used in place of sugar.
