Lauki Spinach Curry

It is a simple Dal Curry with Lauki/Bottle Guard veggie. Many of my friends say Lauki is a veggie without any taste may be because of its high water content, so they try to stay away from it. But I add them to Sambhar, Dals, and Sabzi and even paired with some simple ingredients which give you an amazing taste. Now here's the recipe for an awesome and nutritious Lauki spinach Dal.

Ingredients Lauki -1 medium size Toor dal -1/2 cup Spinach -10 leaves Oil -2 tbsp. Mustard seeds -1/2 tsp Urad dal -1 tsp Onion -1 no’s Tomato -2 no’s Hing -pinch Turmeric powder -1/4 tsp Chili powder -1 tsp Coriander leaves -2 tbsp. Water required -3 cups

 

Method

Peel and cut the Lauki into two halves. Scrape out the middle portion. Wash well and chop them into small cubes. Wash the toor dal two-three times drop them in the pressure cooker.Pressure cook the  dal with 1 1/2 cup water, 1/4 tsp turmeric powder, 1/8 tsp of asafoetida (Hing), lauki.

Bring to one whistle, reduce heat and let it get cooked in medium heat for 10 minutes, then switch off. After the pressure is released, mash the dal and keep aside.Heat up a small pan for tempering.

Pour oil,add the mustard, when the mustard start to crackle adds cumin followed by chopped onions, tomatoes Sauté well till onions turns brown.After it is almost done, add the spinach, salt and sauté.

Add turmeric powder, chili powder, salt then add the cooked dal, prepared masala. Add some chopped coriander leaves if desired.

Lauki spinach dal is ready!

Notes

Garlic can be also pressure cooked along with toor dal
