Drumstick(Murungakkai) Sambar

Sambar is an integral part of south Indian cuisine. It can become boring unless one attempts to innovate with the ingredients and the recipe. Drumstick is a preferred vegetable in our home due to its health benefits. Drumstick is one of the healthiest vegetables known to mankind. It is a rich source of iron, calcium and various vitamins. It is known to be extremely beneficial for pregnant women and lactating mothers, provides warmth and is also a good home cure for common cold, chest congestions and even asthma. Also known as Murungakai in Tamil, it is prepared as many dishes and is an essential part of traditional functions and religious ceremonious. Drumstick Sambar is made in our homes often. We can also use other vegetables like raddish,beans, brinjal.

Ingredients
  • Toor dal -1/2  cup
  • Drumstick pieces -2 no’s
  • Onions -1 medium
  • Tomato -2 no’s
  • Tamarind extract -1/4 cup
  • Turmeric powder-1/4 tsp
  • Red chilli powder - 2 tbsp.
  • Salt –as needed
 
Seasonings
  • Oil -3 tbsp.
  • Mustards seeds -1 tsp
  • Urad dal-1/2 tsp
  • Methi  seeds -1/2 tsp
  • Hing-pinch
  • Dry red chillies -2 to 3 no’s
  • Curry leaves -2 sprigs
 
 
 Method
1. Pressure cook toor dal along with hing and turmeric. Extract the juice from tamarind and keep aside. Cut the drumstick into equal size.
 
2. Prepare the seasoning by heating oil, adding all the ingredients listed under seasoning. After the ingredients are roasted well,, transfer the onions and tomatos to the pan. Lightly stir the Drumsticks with salt and sufficient water .Add tamarind paste (or tamarind pulp) to the cooked drumsticks and cook further till the raw smell of tamarind leaves.


3. Add the Sambar powder and the cooked mashed Toor Daal  and bring the mixture to a boil at medium heat.Check for  salt and add if necessary. Remove the Sambar mixture from fire.
 


4. Now the drumstick sambar is ready.Serve it with steaming hot rice, or with poriyals.
It goes well with carrot beans poriyal,simple potato fry or with some dry curries.
 
Notes
Always check for tamarind extract. Adjust according to your taste.

  6. My favourite sambar.. I love drumsticks but we don't get them in Brazil..really miss this flavour in the sambar.
