Veggie Egg Sandwich

This is a delicious, filling and healthy breakfast recipe that even kids would love to have. It’s loaded with cheese and veggies, obviously egg too. Vegetable sandwiches are most commonly made with onions, tomatoes, capsicum and cucumbers. I like onion, but if you have onion haters, feel free to leave the onion out or offer some chopped onion on the side.Prep time: 10 mins |Cook time: 10mins |Serves: 2 persons.

Idea: My Husband's Version (Breakfast or Tea time)
Ingredients
Quantity
Eggs
3 no’s
Cheese slices
2 no’s
Cooking Butter
2 tbsp.
Cumin seeds
¼ tsp
Chopped onion
2 no’s
Green chillies
1 no’s (Finely chopped)
Chopped Capsicum
1 medium
Chopped Greens( Any variety)
1 ½ cups
Potato
1 large
Red chilli powder
½ tbsp
Chat masala
2 tsp
Pepper powder
1 tsp
Salt
as taste

Method
1. Break eggs into the bowl. Whisk it for some time and add salt. Set aside for few minutes. In a plate,Keep other items ready.
2. Heat oil in the pan and add cumin seeds, onion.fry till transparent .Now add capsicum and greens. Sauté for few minutes in the oil and add salt.
3. Finally add potatoes and keep stirring so that everything combines well evenly. Turn off the flame. Now our green mixture is ready. And pour it in the bowl. Mix well and add the masala powders and check for salt.
4. Again heat the pan, pour a ladle full of green egg mixture batter .Form small omelet shapes which fits the bread.
5. Cut out the ends of bread slices. Place a layer of cheese slice and and then the omelettes.Close it with the other bread on top. Now place it in the bread toaster and leave it for 5 mins.
6. Check to that you don’t overcook the bread or the mixture. It spoils the entire sandwich.It has to be toasted but also cooked. 
7. Cover and toast till the bread becomes crisp and cheese melts.

    1. I did not add only spinach....greens from my garden.It had varieties.

  5. Healthy Sandwich i used to make this but i used to add greens on some days and used to add veggies on some days.I rarely use cheese. I know this is a delicious sandwich. If i feels lazy my hubby aslks to prepare this sandwich.
