Lemon Carrot Rice–Navarathri recipes (Day 4)

Fourth day of Navarathri –Lemon Carrot Rice

Lemon rice is a popular rice during Navarthri festivals.It is mostly prepared for lunch-box recipes.It is made with lemon and seasoning mixed with steamed rice. It is extremely flavorful. At home, my mom makes different kinds of lemon rice.

To be frank,missing those days.This recipe Lemon  carrot rice is made with lemon and carrot seasoned with mustard, channa dal and peanuts which adds lots of crunchiness. It also adds good color combination making it appealing for kids

  • Cooked rice -1 cup
  • Grated Carrot -1 medium
  • Oil -1 tbsp
  • Mustard seeds -1/2 tsp
  • Urad dal – ¼ tsp
  • Channa dal -1/2 tsp
  • Peanuts -1 tbsp
  • Curry leaves –few
  • Hing -pinch
  • Grated ginger -1 “ piece
  • Dry red chilli flakes -2 nos
  • Green chillies slit -1 nos
  • Haldi -1/2 tsp
  • Turmeric powder -1/4 tsp
  • Lemon juice -1 tbsp
  • Salt – to taste




1. Cook the rice in the pressure cooker with a pinch of salt.Let it cool down completely.Heat oil in a pan and splutter the mustard seeds,add the urad dhal,channna dhal,peanuts and asafoetida.






2. Add  dry red chillli flakes,green chillies,grated ginger, curry leaves and toast it for a minute.Now add the grated carrot and  saute it for a minute.add the salt and turmeric powder,mix it well. Switch off the flame and Put off the stove and add the lemon juice. Now addd this mixture to the lemon juice and give a stir.Make sure that everything is blend well.
