Fifth Day of Navarathri –Karamani (Cow Peas) Sweet Sundal

I hope all of you are enjoying the Navaratri now. I made with karamani or black eyed beans today which happens to be my dad’s favourite.It was quite delicious and enjoyed by all of them in the family. I shall be posting the sundal recipes more which I have not posted already.

Ingredients

  • Red karamani- 1 cup
  • Jaggery -1/4 -1/2 cup
  • Cardamom powder -1/2 tsp
  • Grated coconut -1/4 cup
  • Ghee -2 tbsp.

Method

1. In a pressure cooker, add karamani and enough water then cook it for 3 whistles.Keep it aside to become cool. After it becomes cool, now remove the water from the cooked dal.

2. In ½ cup of water dissolve the jaggery.Filter this jaggery syrup to remove dust. Heat jaggery, add cardamom powder and pinch of salt.

3. When its starts boiling well, add the cooked karamani and mix it well.Cook till all the water gets evaporates.

4. Finally add grated coconut and stir it well. Switch off the flame and karamani sweet sundal is now to be ready for Neivedyam.

Notes

Slightly fry the grated coconut using a spoon of ghee and keep aside.

Roast the karamani in a pan till raw smell goes off.

Wash the roasted karamani and soak in it for2 to 3 hours.Drain out the water completely.
