Bhindi(Lady's Finger) Raita

Bhindi Raita is a delicious yogurt based side dish. Bhindi is also called as "Okra".It is very easy to make and one of the few minutes wonders. You can make raita with fresh vegetable such as beetroot, winter melon, cucumber, carrot, etc. Check out some more Raita recipes like Cabbage raita, Radish raita ,Carrot and cucumber raita.Serve this raita with pulao, briyani or roti. Ingredients
  • Bhindi /Ladys finger -2 cups
  • Thick Curd - 2 cup
  • Salt – to taste
To grind
  • Shredded coconut - 1/4 cup
  • Green chili – 1 no
  • Cumin seeds - 2 tsp
For seasonings
  • Oil – 1 tbsp.
  • Mustard seeds - 1 tsp
  • Urad dal - 1 tsp
  • Hing –pinch
  • Curry leaves –few sprigs
  • Dry red chili flakes -3 no’s broken

Method
1. Wash and let the bhindi dry. Chop the ends and and cut it into slices.Add 1 tsp. oil to nonstick pan and fry it in medium flame till its completely cooked but not mushy.
2. Sprinkle salt when 3/4th done. Beat the curd with 1/2 cup of water until smooth. Add this to the okra and mix well.  In the meantime grind coconut, green chili and cumin with a little water to a fine paste and mix it to the masala beaten curd.Heat oil, when got add mustard seeds. 
3. When it starts popping add the urad dal and fry till light golden brown. Next comes asafetida, curry leaves, red chilly. Now add the fried bhindi and the seasoning to the masala curd mixture and mix well.

Notes
Also You can Saute green chilli, cumin powder along with bhindi and add to the curd mixture.(Skip grinding version)
