Method
1. Peel coconut and cut into small pieces for easy blending.Roast chana dal on medium heat until it is light brown in color and has a roasted aroma. Next dry roast the Coconut on medium heat, till it changes color and gives out a wonderful smell.
2. Once done, transfer into a blender. Add water, as needed, to help with the grinding. Addition of little coconut helps easy grinding. Add Salt and Tamarind to taste.Blend to desired consistency by adding Water little by little.Pour into a serving bowl.
3. Heat oil in small pan. When hot, add black mustard seeds.When the seeds crack, add asafetida, red chilies and curry leaves.Pour the seasoning mixture over the chutney
Notes
If Coconut chutney is too thick, you could add very little water to it to make it diluted chutney.Salt could be added to your diluted chutney (if required).
