Soya Chunks(Meal maker) Pulav–North Indian Dish

Soya chunks Pulav is north Indian Staple dish. Soya chunks add texture and flavor to this rice which tastes yummy. You can also add any other vegetable of your choice like peas, carrot, potato, capsicum etc. to make this simple pulao even more interesting.  This rice pulav is a complete meal on its own with some yogurt raita.

Ingredients
  • Basmati rice -1 cup (250 ml)
  • Soya chunks -1/2 cup
  • Water -4 cup
  • Oil-1 tbsp.
  • Ghee -2 tbsp.
  • Fennel seeds -1/2 tsp
  • Clove -2 no’s
  • Cinnamon -1 “
  • Star anise -1 no
  • Onion -2 no’s
  • Green chillies -2 no’s slit
  • Ginger garlic paste -2 tsp
  • Red chili powder -1 tsp
  • Turmeric powder -1/4 tsp
  • Gam masala powder -1 tsp
  • Salt –to taste


Method
1. Soak soya chunks for 15 minutes, in hot water with a pinch of .Squeeze excess water, set them aside.
2. In a pan or wok heat oil add the whole garam masala spices with fennel seeds and allow to splutter.add onions and green chillies and fry until light brown.
3. Add washed soya chunks, red chili powder, turmeric powder and garam masala powder. Sauté for few mins Now add water and rice. Adjust with some salt, cover and cook until done.
Notes
I always use log grain basmati rice for pulav. If you cannot find basmati, use long grain asian rice or mexican rice. Long grain rice stand up to the texture of nuggets and spices used in pulav.
