Drumstick Leaves Egg Bhurji | Murungai keerai muttai thoran

Muringaila or Drumstick Leaves can be used in combination with Egg for preparing Thoran. It is a dry dish and goes in combination with Rice as a side dish. I love drumstick leaves stir fried either with coconut or with egg. A healthy yet tasty drumstick leaves fry which is unknown recipe among many of us. I know that it is a pain to get the greens cleaned but it compensates with its cooking time as this fry just takes 10 minutes from start to finish to cook up.

Ingredients
  • Muringayila – 4 cups
  • Egg - 4 nos
  • Turmeric powder – ¼ tsp
  • Salt – to taste
  • Grated coconut – ½ cup
  • Pepper powder – ¼ tsp
Seasonings
  • Oil -1 tbsp
  • Mustard seeds – ¼ tsp
  • Dry red chilli – 2 nos
  • Curry leaves –fww sprigs
  • Chopped onions -1 cup
  • Garlic -8 cloves

Method

1. Beat the eggs using 1/4 tsp. pepper powder and turmeric powder. Separate the leaves from the stem and  keep it aside. 


2. Heat oil in the pan and add mustard seeds and Red chili and allow to splutter.


3. Add the chopped onion, curry leaves, green chili and sauté well till the Onion turns transparent. Add the drumstick leaves and keep stirring continuously until the leaves are cooked. Add little water and salt and boil. Keep cover and cook for 2-4 minutes.



4. Add the grated coconut and mix well. Once it is cooked well add turmeric powder ,beaten egg and scrambled it well. Stir continuously till the egg is well cooked and dried up.




5. Stir well the leafy egg mixture till the thoran becomes dry and c
heck for salt.



6. Muringaila Mutta (drumstick leaves Egg) Thoran can be serve hot with Rice / Chappathi

Notes

If you want you skip adding coconut. People who are vegetarians, can avoid eggs..

1.      The main health benefits of drumstick flowers and leaves are in the nutritional quality of these parts of the plant as well as the seeds. These parts of the plant are rich in Vitamin B1, B2, B3, Vitamin A, and vitamin C.

2.     The leaves are also said to be very nutritious This may be a very good source for vegetarians and it is said to have the highest protein amount of any other plant situated on Earth.

3.     The seeds have been used as a crushed powder to help purify water that contains dirt.

  11. My favorite muringayila thoran mixed with egg.. Sounds like an interseting combo ! Will definitely try it out. Getting hold of drumstick leaves here in US is a big problem.. I know what I am going to demand from my mom next time I go home :)
